A hint of Orange for Halloween Brunch

I was laying in bed the night before Halloween and decided to make a brunch for my family before we went out to run Halloween errands the next morning.

I decided to put some sweet potatoes and russet potatoes in my pressure cooker to have them already precooked for their use in the morning.

I came up with this lovely dish you see pictured here.

Sweet Potato and Russet potato hash spread on a hearty, savory not sweet , mixed potato cake.

Topped with Poached egg and garnished with grilled green chilis, sliced cherry tomatoes and parsley.

My family loved it and said it is definitely something that could be served at a 5 start hotel or restaurant.
