Blog Entry Originally Written for The Tortilla Project

Hello everyone!

About 2 weeks ago I submitted a blog article for The Tortilla Project Blog.

They made adjustments to it, which is fine for their blog BUT I feel it sounds nothing like if you spoke with me. I am a sensitive artist who wants to connect with possible clients as my authentic self. Not saying their version is bad, I am thankful they had me as part of the blog, but it just doesn’t really sound the way I would share with you.

Also there was the issue of I sent them images to use with the blog entry and they weren’t able to use them all.

I decided to publish the original version along with its images here.

I hope you enjoy and if they still publish, please enjoy it there too , but I wanted it done my way.

(BTW it also includes my Salsa recipe)

Hey Everyone, My name is Charlene Sauce. I am a self taught Chef out of Atlanta but born and raised a Maryland girl and will always be a Maryland girl!

I think being from Maryland is what gave me my love for food. If you have ever been to Maryland you know we love good food, great Blue Crab and huge portions. So if you ever come to Atlanta or ever want to have me travel to come cook for you..you can expect food cooked with love.

I wanted to somewhat keep on topic with the founder of the blog love of Tacos. I cook Mexican Food alot for my family (they love it,me personally I’m an Italian food junky).

Some of the favorites in my home are Enchiladas,Birria Tacos,Regular Tacos, Mexican Lasagna, Beans and Rice, Quesadillas and Burritos. (I’ll be doing a Quesadilla video in the next few weeks)

Char Sauce quick and easy Salsa recipe

Note: I do not cook by measurements, I have an Ungodly natural sense of taste and flavor layers.

If you dont have that same gift, I suggest measuring and tasting till you find just the right taste to compliment you and your families taste palette.

I like to add the following (get your food processor out. You’ll thank me)

2 red onions
2 white onions

5 tomatoes
Olive oil or avocado oil
2 chili peppers or Jalapenos
(Use sweet peppers or mango if you don’t like spice)
A dash of powdered cayenne pepper
Some recaito or sofrito (I buy mine premade)
And half of a bundle of fresh cilantro

Add as much lime juice as you like , I’m lime heavy because of love the taste.

Now you’re ready to chop it to a consistency you prefer in your food processor.

If you have a smaller food processor, I suggest doing it in portions then pouring it all into a larger serving bowl.
