Faux Oxtails and 2 other great dishes 12/13-12/16 2020

Hello, are we all in the Christmas spirit yet… lol?

I know personally it just does not feel the same this year and not just because of Covid but several reasons but I am
making it through it.

Let’s get into this weeks cooking. ( PLEASE ON THE TURKEY OXTAILS VIDEO IGNORE THE POP UP THAT SAYS GREEN TOMATOES, THAT WAS FROM AN EARLIER VIDEO TEMPLATE, SO GOTTA RE EDIT LOL)

First I wanted to give this disclaimer statement:

It is the weirdest thing ever..
I guess it’s like a nervous twitch.
When filming video no matter what type of video..I always have a habit of touching my face or hair.

It even happens when I video chat with people..smh

I assure you I wash my hands A LOT when cooking, alot in general due to COVID especially.

Every time I touch a meat or bread something…etc even then hands are washed.

The strange thing is IF I AM NOT VIDEO SHOOTING, AND JUST COOKING IN MY KITCHEN ALONE…

I dont touch my face!!!

So it’s just some weird anxious twitch I guess..

Anyway on to the video!


So this weeks fun included:

Loaded boiled and baked (twice processed) potatoes smothered in Leftover Tuscan Baked Ziti sauce and
served with a roll covered in melted butter and melted Mozzarella cheese.

Next up:

A Stunning Breakfast

Boiled Eggs then battered and breaded and Fried
My staple and specialty Fried Green Tomatoes ( battered and Breaded of course)
served with delicious Mozzarella and Sweet Pepper Scrambled Eggs with Panini grilled slices of Toast
Also served with a made from scratch Tomato Sauce that was delicious
That sauce included Basil paste, olive oil, tomatoes and some old bay and meat seasoning all simmered for about 20 minutes.

The Star though .. HOW ABOUT THOSE GHETTO OXTAILS?

When you want to save on costs and this close to the Holidays we do…
replace Beef Oxtails with Turkey necks. ( Also great for those who don’t want to eat red meat)

This was definitely slap your Momma Auntie and sister good!
Served with Black Beans and Rice
My own take on the Fried Jamaican Dumpling
and Garnished with chopped Green Onion and Tarragon…

Ive listed some of the ingredients below:

Ingredients for Oxtails: ( Turkey Necks in this case)

3 pounds of either Oxtails or Turkey Necks

Multi colored Sweet Peppers

1 red chili pepper

Chopped Garlic and red onion

Olive oil and vegetable oil

Coconut milk

Flour and hot water mix

Browning

Garlic

Cumin

Onion powder Worcester sauce

Ketchup

Plain yogurt

Ginger powder

Oxtail and stew seasoning 

Vinegar

Jamaican curry powder

The wet seasoning
Tomatoes

Basil

Beef Bullion

Garlic

Onion powder

Olive oil

Chopped red onion

The marinade
Italian dressing

Teriyaki Sauce

Vinegar

Meat seasoning

Pepper

Paprika 

Garlic

Sazon
Close and seal in bags for minimum of 4 hours best at overnight
