Ocean City Md was fun! Food was Amazing! I’ll Be back in Maryland in April and Summer!

As you all know, I traveled home to the Eastern Shore of Maryland this past week.
It was good to be home. Although boy did this trip have a lot of hitches.
I planned it, I promoted it…

But the first 2 days were met with issues I had no idea were going to arise and followed by even more weird occurences.
Not to mention due to those occurrences, I wasn’t able to do the Oysters,Crab Cakes or Fish. I deeply apologize to my Seafood hookup and
plan to send him some money for that once back home and straight. This was carefully planned only to have a financial blow dealt within just hours
of my arrival to Maryland from Georgia.

It truly was as if the Universe wanted to sabotage it but I remained true and focused and put out some really,really great food!

It was amazing! And with what I did not finish selling I managed to give to a family I LOVE, who is my family to enjoy and I have
no problem with that. To me that is still a success. While I am a self taught Chef and it is DEFINITELY a business…
cooking for me is also just LOVE!

I love feeding people. This trip was also important to get people to taste my food so you all would know it is really good.
I cook with lots of flavors, color and love. Every meal is constructed with love.

This food in Maryland was served more family style,but you can go through my other blog entries and see that I am good at presentation,
plating also because people eat with their eyes first.

The Menu Consisted of
Pork Chops
Fried Chicken ( with option to dip in Old Bay hot sauce)
Smothered Chicken with my homemade gravy
Homemade Collard greens w smoked meat
My special Pizza Pasta
My RICH CREAMY, crusted mac and cheese
Vegetarian options fried Cauliflower steaks also could be dipped in Old Bay Hot sauce.
Homemade ,down to the apples apple cobbler(store bought dough)
and served with Kings Hawaiian rolls.

I won’t give away all my recipes on these items as some are my secret.
BUT here is my secret to perfect, golden fried chicken every time with no room for red flesh on the bone.
I marinate my chicken for at least 4 hours sometimes overnight.
I use Mojo marinate, orange pepper, old bay, black truffle salt, merlot salt, and some red Goya powder and poultry seasoning and dried Rosemary(IMPORTANT THE SAME MIXTURE GOES INTO MY FLOUR PART OF BATTER, EXCEPT LEAVE THE WET MOJO SEASOING OUT OF COURSE)
Also when ready to batter you will need a second bowl with 4 eggs and buttermilk whisk together.

But the first step after you marinate the chicken is…
MINDBLOWING.. I take my chicken and put in a large pot or medium pot with about 1 cup water at base and cover with lid.
Cook this way for NO MORE than 15 min.

This gets the meat good and juicy and pretty cooked, but you still will need more cooking time of course.

let it cool then dip in the wet mixture of eggs and buttermilk and then in the dry mixture of flour and seasonings.

This shortens the cooking time in the frying pan or deep fryer and allows you to get that perfect reddish, golden batter color once the chicken is done since you cooked it first and cut the time in the fryer in half.

It works and the chicken is well flavored and cooked to perfection every time that way!!!

I wouldn’t change a thing about the first trip. I loved being in Ocean City the owner of the rental we stayed at was amazing.

She even allowed us to stay 2 extra nights once our travel back home got moved to Monday due to road conditions going Southbound.

My next trip will be in Baltimore I think in April

Then I hope to come back and stay directly in Salisbury In June or July.
