Ricotta and Avacado Spaghetti w Cheesy Bread

Creamy, ricotta and Avocado pasta!

Making those leftovers WIN!

I took stored already cooked slightly alfredo coated noodles w mushrooms and roasted red peppers..

I mixed them in a skillet with a creamy sauce I made with Avocado, ricotta, garlic olive oil, drizzle of balsamic, smoked paprika,a few capers and caper brine and poblano. I used my food processor to make it super creamy and smooth.

Next freeze dried basil and rosemary.

Let it heat it skillet prior to noodles for like 10 min then add noodles and toss only till hot.

In a small saucepan I poached my tomatoes w basil a little dill and olive oil and merlot salt. Then added the arugula at last minute to sweat it down just a little.

I took Hawaiian rolls, drizzled in oil and smoked paprika, garlic powder and cheese let it melt in oven for like 10 min.

Top with Romano cheese and a drizzle of the essence from the tomatoes.

A yummy, creamy, healthy delight.

Meat free option!
