Musings from the Kitchen,

Ok so I didn’t blog for a whole week.
I was catching up on my other business. My web design company and handling real life crap
with IRS, State of Ga crap, Homeschooling etc. You get the point. I have been busy.

But lets take a quick moment to share my Homemade ribbon pasta with Beef Neckbones in Marinara sauce.
Served with my own butter sauce filled with Leeks,Fresh tomatoes, Spinach and garlic. Sooo yummy.

So to make this pasta, I made my dough.
I used 00 Semolina Flour from Italy. Kroger and Amazon both have it and I am sure Whole Foods.

I used 2 cups
1 cup water
a drizzle of oil
2 whole eggs
1 egg yolk
Salt
Smoked Paprika(Only on these,but you can add other things like Squid Ink,Beets whatever to your pasta for color and
flavor)

I use my food processor to blend( set on low and on pulse)

Once its all mixed into something of a dough ball

coat your cutting board in flour or cornstarch and Kneed to create some gluton
Not to much tho,or it’ll be too dense.

Take it and it in a bad or cover in a bowl with a wet rag
Let it sit for 30 -40 min.

Okay take it back out and get your rolling pin.
Cut it into sections.

If you don’t have a Pasta machine… ( My pasta machine is my next purchase)do as I did here and roll the sections out.

Your pasta should be rolled thin enough to see your hands through. Dust with flour or corn starch as needed to keep
it from sticking to your pin and to each other once you begin cutting and laying aside.

Get a really sharp knife.I use my Chef’s knife and cut the strips as evenly in length and width as you can. It won’t
be perfect without a machine but they will still be nice, tasty and pretty.

Your water should be boiling,and salted with some oil in it.

Place the noodles in a little at a time, so they dont stick to each other.

They rise to the top once they are done.

Prep time about 1 hour.
Cooking time about 3-4 minutes.

Drain them.

Now toss them in the butter sauce w veggies and garlic we created.

Next place a marinara sauce covered tender beef neckbone on the plate.

Garnish and serve!

Next up the quick simple Burger ( BUT SUPER SIZED)
served with fried seasoned Cauliflower.

So basically I made a large thick patty seasoned beautifully with Steak seasoning, all purpose seasoning,
orange pepper, black truffle salt and garlic.

Cook until medium rare on stovetop.

Then cover in a pan and cook burgers in oven on 200 for 20 more minutes. Keeps the juice in and ensures a perfect medium
rare burger.

For the bread (OMG this is sooo good)
Walmart has the most tasty Vanilla cream cheese Brioche bread.
Cut it into 4 big squares then split those down the middle side ways to create your buns.

Toast till inside is crispy but top is still soft, sweety and delicious.

add Spinach leaves to bottom and top bun
Place burger with melted cheddar Velvetta inside.

Add whatever toppings and dressings you love.

Add the fried,seasoned Cauliflower as a side.

and just like that a Delicious lunch.

SPECIAL addition

Breakfast 3/8/2021

The Sauces Best Breakast Burger thats on my specialty menu..BUT this time with Queso Blanco Velvetta, Dill ranch
and Cucumbers!

Burger patty made same as above!

(My bread is homemade)

Find any biscuit recipe you love( mine consists of softened butter, thick buttermilk, salt, self rising flour (2 cups)
2 whole eggs)

To make my dough I use my food processor same as the Pasta above.. just the processor part not the bread recipe)

Only with this one you must Knead the dough longer to make it be more dense but it should still have
some air pockets in it or texture.

once kneaded roll it out into a thick slab.

Get your circular pasty cutter and cut out your biscuit circles.

Spray non stick spray to a large baking sheet.

Top the dough with Old Bay, Cilantro leaves, and Mozzarella.

Bake till golden brown.

THESE ARE THE BURGER BUNS

On stove top in one skillet melt a sheet of cheese, use shredded or Velvetta (shredded is much easier)
Let it burn just a little. Then turn pan off.

Next in another pan soft fry 4 eggs.You want the Yolk runny.

Now let’s build the burger..

From the bottom up

Bottom bun
Burger
Soft egg
Fried melted Cheese
Baked or grilled sweet pepper.
Sliced Cucumber with Dill dressing
White onion slice
Top bun

Its thick so use toothpicks or a skewer to hold together.

Serve w a side of sliced Cucumber w Dill dressing, or hash browns. Whatever you prefer.
