Sunday Meals from my Home 12/20/2020
First up on this Sundays cooking
I used (repurposed) the left over curry gravy from the #ghettooxtails
Put it back in the deep roaster pan..added a bit of water…
Then I loaded in the Pork Neck bones
Some Goya power, onion powder and 2 teaspoons of liquid smoke.
An hour in I added half a green onion and 4 carrots (to use as food and also to garnish the dish)
Let that cook at about 400 degrees for about 2 hours till meat is super tender and delicious.
Garnish w the cooked tomato, carrot and parsley.
Serve with rolls or toasted bread and beans and rice.
Warm, hearty and delicious.
Next….
A NEW kitchen creation…
Sauces Best Catering Fried Macaroni and Cheese Balls.
Make your elbow macaroni first
Add whatever cheeses youd like and
Mix on top of stove…were not v
Baking this since it is going into our dough to create the roses
To make the dough
Use amounts equal to how many you are creating
I used about 1 and a half cups of flour
2 eggs
Salt
Old bay
And water added in slowly while mixing to get the consistency I wanted.
Next sit in fridge to firm up for about 30 min
Lay down wax paper and some flour on a table or counter
Using a rolling pin roll the dough into a huge square about the thickness of the dumplings you make for chicken and dumplings
Next cut into equal medium sized or large rectangles.
Now take an in each rectangle on the middle fill will the mac n cheese mixture.
With each rectangle you’ll first fold each section into the middle..
Then with flour both sides and then in your hand make it into a ball.
You will notice it wont stick since we didn’t use any egg wash..well it will stick but it will have lines and openings in it ..(none that show the mac and cheese though if you do it right)
Those lines and crevices will form the petals of the rose once they hit the deep fryer.
Make as many as you like.
Already have the deep fryer on 250 degrees
Take the flour and mac and cheese Rose’s to the deep fryer and cook 2 to 4 at a time depending on size of your basket.
Fry till firm and golden on outside and until the dough separates creating the crisp effect of a Rose.
Take them out.
Garnish with Parmesan, Schriacha and Parsley.
It’s a yummy pull apart and eat treat!
