Leftover Magic! Vodka linguine w Salisbury Steak and Breakfast Frittata
Yall know me, I am the queen of food storage, repurposing and turning the left overs into something great . Btw there is this really cool show now on #Netflix all about cooking w leftovers. Go check for it and give it a watch.
My Mom Mom raised me to waste nothing. Food waste is a horrible and selfish problem in the US. It really shows our ungratefulness and entitlement. Dont throw good food away folks.
As you know I recently created my last 2 signature sandwiches. I had a great deal of leftovers from their construction.
So here are two dishes born from those leftovers.
The baked brunch Frittata used the remaining shrimp ,for instance.
So because of my hand injury I knew I couldn’t properly make more meatballs to go with the ones I already had left over…
So the plan was to make salisbury steaks out of the remaining seasoned ground beef I didn’t use for meatballs and serve it on top the linguine and sauce. (The color in the images due to it being night time make it look more red than it is. Its the vodka sauce I made the other day and its more orangish than red. Anyway its delicious)
They def (due to my hand and not being able to use 2 hands to shape and flatten) didn’t come out in the shape of salisbury steak..but boy is the taste amazing.
Both the breakfast dish from today and this meal use components of left over elements from the Creation of the Sauces Best Sandwich series.
The Frittata consisted of: Breakfast is served. Baked Frittata filled w bacon, peppers, cheese, shrimp, parmesan cheese shavings and red onion…
