Brunch and Cocktails
Is there anything better than brunch. I personally am not friendly or even
hungry early mornings for the most part. So brunch is just better and it’s a real chance
to show off and be fancy with quick foods. Now I don’t mean microwave quick, but quick and fresh beautiful
dishes.
I should have blogged this one a while back but I have been busy.
This is Smoked Paprika and Garlic,no batter, fried chicken. Made lovingly
in a cast iron skillet.
As always clean and marinate your chicken. I used apple cider, black truffle salt, lemon pepper
and Mojo sauce usually in a Ziploc bag. Let chicken sit in Marinade for at least an hour.
Next you want to bring it out dry it up just a little (I like to keep most of the flavor from my marinades on my meats)
and put in the already hot and ready skillet.
Fry till it crisps up some then rub butter and smoked Paprika on and finish in the oven. I personally
used 5 leg quarters. I leave in the oven for about 10-15 min to get the flavors all in and to be absolutely
sure meat is done closer towards the bone.
Save the oil in the skillet.
Now grab a non stick regular skillet and make your fluffy egg scramble.
Make this however you like, filled with whatever you like just be sure its buttery and salted.
Back to the skillet.
Get some slices of potato bread and toast it in the leftover chicken infused oil.
It created lovely,richly flavored and colored toast.
Garnish the plate with fresh salsa, fresh tomato slices and dried or fresh parsley.
I served with Dulce Vida Grapefruit Tequila. We also had Svedka Mango Pineapple Vodka mixed with Pineapple juice.
