Potato Burgers (croquettes)
FIRST off how in the world did I not notice that Dried sauce spoon laying on my work station… UGH…. I hate it.. I was not ready…..( I had made a plate of yesterdays Primavera for my man before he went to work and left than darn spoon sitting there.. smh)
But on to the food…
To make boil 4 Russet potatoes. Not as soft as making mashed potatoes.
Once you can get the knife in easily drain them
Place on freezer for 90 min
Take them out of freezer
Peel them.
Next you want to out the following into the food processor…
The peeled potatoes
3 spoons of room temperature butter
Chopped fresh garlic
1 medium red onion finely chopped
Add old bay
Onion powder
Orange pepper
Lemon pepper
And 2 cups bread crumbs (add more till firm)
One egg to bind
Pulse till firm and thick BUT not pureed.
Let sit for 20 min
Then add a little flour to your work surface
Make your patties
Cover and let sit while you make the Thai rice noodles
Use a wok ..
Use water and some vegetable oil.
Cook rice noodles till translucent
Drain water
Add Kung Pao sauce
Teriyaki sauce
Sesame oil
Rice vinegar
Black truffle salt
Cook for about 6 more min
Then take off heat and mix in all your power greens and fresh cucumber
Set aside w cover
Now fry up your potato burgers till browned and crisp on each side.
Cook a soft runny fried egg for each plate.
Garnish plate w lettuce leaf
Dried parsley flakes
Charred green tomato
And long sprigs of green onion chutes.
