Inauguration Eggs and Saffron Potatoes

First step

Use already browned and seasoned ground beef

And Italian Sauce put it food processor and grind down to a fine consistency.

Place in frying pan to brown add just a little tomato sauce.

Next take 2 boiled potatoes

Place in food processor

Add a half stick of butter
Light salt

And powered saffron seasoning (its a beautiful red orange color)

Actual fresh saffron is the most expensive seasoning herb. That is not what was used here. But it is totally worth the 20.00 for a bottle of two saffron twigs as I call them.

The saffron In my potatoes is the main component in a well known Goya product sold in a powder. You can still taste the saffron and for this its cheaper.

Pulse the potatoes and the ingredients together till you have smooth velvety potatoes.

Next make your scrambled eggs

Butter, spinach, mozzarella  old bay and salt and sour cream. Cook till cream and gooey.

Remove from heat.

Time to plate

First layer the potatoes!

Then a nice spoonful of the ground meat

Then pile some spinach eggs high.

Next garnish w parsley and cilantro

On the plate I placed scriacha dots

And a spinach leave topped with small pearl onion slices dotted w more scriacha

Yummy and great
My advice take your fork full thru the scriacha each time for a spicy sweet bite.
