Cardamom, Thyme Infused Pork Loin Chops w Fried Gnocchi and Curry Cabbage
I am not doing too much cooking this weekend.
I have lots of web design and copy writing to do for my other job as owner of my own Web Design and Marketing company.
But I did find time on Friday night to make this delightful dish.
I made some thick pork loin chops. Cooked with love in oil, cardamom seeds, and fresh time. Fried with continuous basting. Also cooked with diced white sweet onion.
I also made a red wine gravy for them from the oil left in pan, more diced onion a little spicy mustard. Add just a splash of red wine…Wisk Wisk wisk till a little thick. Let it sit.
Next I took my stored Gnocchi from when I made them last weekend and (remade or reinvvented them) and I actually prefer how I made them this time and I think this will be my continued method.
I coated them and the mushroom, onion and spinach that was already in them, in plain yogurt and bread crumbs and put them in a piping hot pan with oil,thyme and the powdered saffron infused seasoning I have and fried them up. Be sure to use the Italian style flavored bread crumbs. Oh my god the texture became divine and the taste mouthwatering.
Lastly I cooked some curry cabbage with smoked meats. Infused w vinegar,curry powder, onion powder. I used both purple and green cabbage for color.
Just like that, a delicious and quick dinner.
