Eggs in Purgatory

Sunday is the perfect day for a fancy brunch menu type breakfast.

Today I decided to make Eggs in Purgatory. A spicy and fragrant and visually beautiful dish. I have excluded the bay leave from mine.

Next time I will ad fresh basil leaves.

I made it for the first time…
In my first learning experience w this dish, I’d know next time to use a more shallow pan and  little less tomatoes.

But overall it was absolutely delicious and my family and I enjoyed the result.

I also added spinach to my version and my family doesn’t like poached eggs in the true runny form (I love it they don’t) so these are a hard poach version.
