Flashback to last Christmas Eggplant Parmesan

I always include at least one Italian dish in my Holiday Meal Menu… Even for Thanksgiving.

Why you ask? Because it’s my own personal favorite.

Last Christmas I made Layered Eggplant Parmesan on my own for the first time and let me tell you..

It was AMAZING.

(Secret for those who think Eggplant will be soggy.. slice the Eggplant and sprinkle lots of salt on it. Cover it and let it set for 2 hours. This draws all the extra moisture out)

Next you season your slices after you have dried them off in paper towel. and then I personally like to egg wash mine and then dip them in Italian Breading batter. You then fry them till they are crisp.

From there you create your egg (one egg), ricotta and pesto mix.

Get your casserole pan and simply layer with sauce and ricotta same as you would a lasagna.

Garnish with Parsley and basil leaves.

Your Family will love you for it.
