Ginormous Steak and Shrimp Salad w a side Hasslebeck potato

Most of my entries are about my foods..
But I wanted to get real personal today.
Look I AM a gourmet chef, self taught.
I CAN cook and deliciously so lots of different foods from different regions and flavors.
I have taught myself good presentation and plating.
If you knew what I went through years before this journey, you’d know how much this means to me.
I began to cook professionally and market professionals 7 months ago. All I want is a chance to prove myself within the culinary world.
I want to cook proudly for regular folks celebrities all of it.
I know some of you may think my expectations are unrealistic but I KNOW they aren’t. If you knew my journey you’d know I ..Charlene Dashield can overcome and win over anything placed in her way.
I am beyond up for the challenge. I will invest in my business growth till the wheels fall off. That is how sure I am of myself and my capabilities.

Preseason and marinated the chuck roast
4 small Angus tenderloin steaks
And 2 large bags of frozen shrimp
Next cook the chuck roast covered on 350 for 2 hours…
Then were going to sear it in a cast iron pan
Looking for rare to medium rare (my small steaks went rare…my larger from the chuck went more well done)
Cook your seasoned shrimp using a steamer pot
marinate for shrimp
Old bay
orange pepper
vinegar
granulated onion
soy sauce
merlot salt
marinate for beef
vinegar (also injected)
orange pepper
old bay
lemon pepper
oil
black truffle salt
a little regular salt
Onion powder
veggies for salad
cucumber
romaine
baby power greens
sweet white onion
tomatoes
green onion
orange sweet peppers
Homemade vinegrette
vinegar
oil
spicy mustard
sesame oil
1 small bottle of steak sauce
orange pepper
tequilla lime seasoning
pinch of salt
whisk to smooth consistency
Homemade croutons
slices in strips of 5 pieces of potato loaf bread
drizzle in oil
then cover in
onion powder, orange pepper, parsley flakes,smoked paprika, lasting grated parmesan cheese.
