My cooking 2/2 -2/3 Batter Fried Salmon, Asian Rice Noodles and the Quesadilla Hack

Hey guys! For a moment it looked like I would have to postpone my Eastern Shore of Maryland Trip. But then …

It worked out! I am so happy to be able to come and see everyone and to bring my cooking to you!

This week I tried to cook simpler meals as I have to cook on Saturday before I leave for my sweetums for Super Bowl.

I’ll be posting that as well…

But in the meantime here are my creations.

Batter Fried Salmon ( I used the Old Bay Salmon Seasoning)

I also used some Mojo Wet Marinade.

I took the skin off the Salmon and fried the skin separately and used it as a garnish.

Lastly, I served it on top of my version of Succotash , rice, Lima beans and diced tomato.

Seasoned with Old bay seasoning, salt pepper, butter and granulated onion.

Side salad of baby power greens and sliced ripe tomatoes. Diced in a vinaigrette made with Mojo and apple cider and lime juice.

Next up the Asian Rice Noodle Stirfry

For this I used the following fresh and steeped vegetables.

shredded carrots, fresh green beans, fresh sweet corn (cut off the cob) ,sliced and cubed sweet peppers,

sweet white onion and red onions, parsley stalks.

I also used minced Asian Flavored chicken meat from my Asian Dumplings ( go to that post here to see how I made that)

1 and 1/2 pound of shrimp, peeled, deveined and tails removed.

1 box of Thai rice noodles from Amazon

and Kung Pao sauce

Sesame Oil

Rice Vinegar

Teriyaki sauces ( 2 types mentioned in video)

Green Onion

Onion and garlic powder,

salt, pepper, old baby, ginger,

Topped with a soft fried egg!

Last but not least The Quesadilla Hack.

For mine I used large Tortillas,

Creamy Scrambled Eggs, Velveeta, Black beans cooked in Bacon Fat, Bacon and meat (chicken and Italian sausage) mixed with peppers.

I then followed the slice at bottom and fold method you will see in the video, And griddled on my Cuisinart Griddler.

Garnished with peppers and onion, Tajin seasoning and Sriracha sauce. Served w fried Green Onion.
