The Leftover Queen does it Again.. Giant Tacos
As you all recall before Super Bowl Sunday, I made a feast for babe because I wasn’t going to be home.
You can find that article and its videos just a few posts below!
So with the stored Chili and rice and then with fresh sliced pork chop loins I made yesterday, I created these HUGE
half a serving tray sized tacos.
I took the Chili and rice and added velveeta cheese to them in a skillet.
I then sliced up 2 nice thick pork loin pork chops and set them to the side.
Next in a cast iron skillet, I sprayed with non stick spray and laid a giant tortilla normally used
for burittos in there. (I have a tortilla press, but I wasn’t making fresh shells when I had ample store bought ones)
Lay in in flat, then fill one half with your mixture, then the pork slices, and then the onions, tomatoes, spinach
and peppers. Then fold over. Let it get nice and crispy and then flip to other side.
Use the spatula to remove from pan.
Its that simple, serve with Salsa! I also put my homemade Avacado Salsa inside of one of them and cucumbers for more
texture…
Yummy!
Its all about not wasting and reinventing your leftovers folks!
Freeze, store and remake into something great!

UPDATED 2/20/2021 THE NEWEST ADDITION THE SUPER SIZED SHRIMP TACO
So for Saturday night dinner…
I myself will be having more of the shrimp and steak salad from last night.
But my family wanted tacos, beans and rice tonight.
I made my own salsa.. ( I hate the store bought but we do use it once in a while)
Trinitys tacos were on regular sized Tortilla shells to create normal sized tacos.
While the ones you see photos here were my babes plate.(used the large burrito tortillas to create this size)
This is the pescatarean version of the tacos.
The meat is SHRIMP
Inside is jazmine rice, seasoned with the reddish,yellow Goya powder normally used on chicken.(cooked with diced tomatoes,red kidneys and black beans)
Tomatos w Black Truffle salt
Fresh sliced sweet pepper
caramelized onions
Spinach and romaine
velveeta cheese
Served with a side of the fresh salsa, and beans and rice garnished with salted cucumber slices.
Everyone is loving these big tacos, maybe just maybe I’ll add them to the Sauces Specialty Menu!
