Did someone say Sweet Potato Fries?

So last night my partner had a want for potatoes. Both my Homemade Potato Salad ( My granny’s recipe) and something using a Sweet Yam.

I turned on my deep fryer, sharpened my knife and whipped these beauties up.

Frying time about 8 min to make sure they were tender enough.

Once they were complete I made my special sauce.

I used Honey Mustard mixed with Vanilla Extract. I also added a little Cinnamon.

You can do the same with a Mango sauce if you prefer.

While this dish didn’t have a meat, I love it paired with Caramelized Salmon since the colors are similar.

Garnish with Parsley and some fresh Sauteed Spinach when you serve it with a meat of your choice.

I honestly believe you can make a great batch of these even for the holidays , if you want to break the monotony of the

sweet potato casserole we all eat each year.

Especially since gatherings are likely to be smaller this year due to Covid.
