Garden Primavera Pasta… Quick and Affordable
I wasn’t sure what to make today since I didn’t want to leave and go out to the store. I just felt like enjoying a day of peace.
But I decided I wanted to cook because we had a few leftovers from earlier this week but not enough for everyone.
I went in my fridge and pulled out the following:
a sweet pepper
some green onion
shallots fresh garlic cucumbers
I also used some Canned Crushed Tomatoes
left over pork stock, and Balsamic Vinegar.
Garnished for plating with tomato slices and fresh basil leaves.
And just like that.. A DELICIOUS DINNER!!
I am normally quite the carnivore but this is really good.
For vegetarians and vegans leave the pork stock out and use a vegetable stock instead!
