West African Inspired Juneteenth 2021
Juneteenth is a very important to people of color descended from slaves in the USA.
A show I highly recommend you watch “High On the Hog” on Netflix to learn all about
where we as a people came from as well as our Culinary history.
Did you know baked Mac and Cheese and French Fries as you know and love them come
from Thomas Jefferson’s French Classically trained Slave chef?
Did you know George Washingtons Chef was the first “Celebrity” Chef? Did you also
know George Washington didn’t want to allow him his freedom so when he found out
he’d be free in Pennsylvania he sent him back to the DMV in a lower position as a slave.
Martha Washington stole and published his recipes as her own.
Half the food you eat in the US was via the slaves.

I was so inspired I bought the books Jubliee and The Jemima Code. Great books.
Then I did my research and found and ordered my authentic West African Spices.
I then put my own twist on some classic African American cuisine for my Juneteenth feast.
RED IS A CONSTANT THEME. IT IS AN IMPORTANT PART OF JUNETEENTH. IT REPRESENTS THE BLOOD OF
OUR ANCESTORS.
I present to you the Menu:
Baked Mac and Cheese
Saffron red beans and rice
Cocoa red velvet cake (too much cocoa so a really dark red in real time) topped with
Strawberries and confectioners sugar. (served with store bought red velvet cookies and ice cream)
Leg of lamb glazed in Hennesy and honey sauce
Chicken Lolipops glazed in Peanut butter syrup sauce
TRUE African seasoning GUMBO (not Jambalaya) full of shrimp,tomatoes,okra,yellow squash,tomatoes,celery,sausage,neckbones,green onion, peppers and onion and carrots.
Served on top of red hand rolled dumplings
Sweet potato salad dressed in apple juice and mustard
Buttermilk biscuits
